Originally invented as a more versatile variation of the Julep Strainer, the Hawthorn Strainer’s game-changing element was the flexible spring that rings its central perforated metal plate. The spring fits snugly on top of your mixing tin or shaker, trapping more of the ice, muddled herbs and fruit than the wider holes of a Julep Strainer.
The Hawthorn Strainer quickly became the preferred tool of the Gilded Age bartender, eclipsing the Julep Strainer, although today both have pride of place in any well-equipped bar – with the Julep Strainer generally used to make stirred cocktails, the Hawthorn for shaken drinks.
